Coconut palm sugar is completely natural and unrefined sugar. It is obtained by the blossoms that grow high on the coconut palm. Blossoms are opened and then their liquid nectar is collected. Nectar is dried in the air and crystallized in sugar, which is brown by nature. Coconut sugar has a soft caramel flavour and therefore makes a great alternative to ordinary sugar.

How does it work?
Its advantage is very low glycemic index (GI 35). Glycemic index shows us how quickly the carbohydrates of certain food convert into sugars. It is better if this process is slower. Foods are considered as foods with low Glycemic index if value is less than 55.
