Tapioca is a good choice for thickening pie fillings, since it thickens at a lower temperature than cornstarch, remains stable when frozen, and imparts a glossy sheen. Also used to thicken soups, stews, and sauces.

Preparation: add the same amount of hot water to the appropriate amount (about 50g per person) of couscous. Cover with a lid and let stand until the food has the desired consistency. Add salt and a little olive oil, stir.
