Preparation:

  • In a large bowl, combine the pancake mix and 1L milk, water, or your favorite plant-based drink. If using eggs, add them now (optional 2 eggs for extra texture and protein). Whisk until smooth, then let thebatter rest for 5 minutes to thicken slightly.
  • Preheat a non-stick pancake pan over low-medium heat and add a bit of oil/butter.
  • Pour a small amount batter into the greased pan. Tilt the pan gently to form a circular pancake (10-12cm in diameter). 
  • Cook on both sides for a few minutes until golden brown. 
  • Serve with your favorite toppings and fresh fruits.
